There are some good whitewater spots on Trinity River; Billys Peak is stunning and can be seen from here. Get yourself into a kayak and hit Coffee Creek, and there is a great hiking trail nearby called the Deacon Lee Trail. That right there is a heap of entertaining things already but it goes on, the Klamath Mountains has it all.
